This was the first year we’ve had our own Thanksgiving since Alaska. I spent several weeks searching recipes to find a meal plan that worked. We decided to include the staples of turkey, mashed potatoes, and gravy. I also found a recipe for a green bean casserole using fresh green beans and something called “Cauliflower Sformato” which was an Italian souflee. For dessert, we departed from the usual pie and chose a show-stopping six-layer salted caramel chocolate cake instead. It was amazing – and we got to eat leftovers for almost a whole week. Scott and I worked rather well together chopping, mixing, mincing, dicing, roasting, and assembling our meal. Although we enjoyed having our own Thanksgiving, we missed celebrating with family and friends back in Wisconsin and Minnesota!
